Not Rocket Science
Cold air is more dense than warm air. So Adande designed a fridge and freezer system that holds the cold air in insulated drawers. The unique design can be stacked up to three drawers high and can be located in any part of the kitchen. It keeps your food perfectly cool, even in the cookline. Unlike in other units, where air is forced around the cabinet, in an Adande Drawer cooled air is gently dropped onto the contents when the drawers are closed.
This simple difference in approach means that Adande Drawers are the only refrigeration that provides stable storage temperatures and a humidity controlled environment.
Even during frequent or prolonged drawer openings, the attack from high temperature ambient air is minimal.

- The drawer runners are external to the insulation, giving incredible strength which allows up to 40 kg of storage per drawer.
- There is no freezing up of runners so each drawer can be used both as a fridge and as a freezer. Switch from one to the other from service to service or as menus and seasons change.
- With one removable insulated tub, cleaning and hygiene maintenance is quick and easy.
- Moist, warm kitchen air cannot attack the food, so when in freezer mode there are no ice crystals, no clumping and no freezer burn. Added benefits are longer lasting oil and reduced spitting from fryers.
- In fridge mode it results in fresher food, fewer bacteria, no smells, no contamination and no soggy food.

Just Simple Physics
It is a Basic Fact That Cold Air is Heavier than Warm Air

Whenever an Adande unit is opened the insulated tub moves out of the cabinet. Although there is a little spillage the majority of the cold air remains in the drawer with the food.
Cooled air is then very gently dropped into the drawer to bring the temperature back to the set point.
Door Units are Not Great for Your Food
Given the difference in density between the air in a fridge or freezer and that of the kitchen, it is no wonder then that the cold air ends up on the floor every time a door cabinet is opened.
Warm kitchen air rushes in replacing the lost cold air and bringing moisture, containing bacteria, which then condenses as it cools, falling like raindrops onto the food.
Conventional Drawers are Even Worse

Unfortunately conventional drawer systems are worse than doors.
There is a syringe effect which drags the cold air out of the cabinet when the drawer is opened and pumps the warm kitchen air back in when it is pushed shut.
Damaged Vertical Seals Leak Cold Air
Even with doors or drawers shut any small cuts, tears, or food deposits on the seals can cause the constant loss of cold air.
Not only are the seals in Adande units horizontal but they are protected from damage and are guaranteed for two years.
The Maths
For the more technically minded the density (d) of the air depends on the temperature and pressure: d = M.p/R.T (in g/m3)
M = (mean) molar mass of air = 28.8 g/mol
p = pressure in Pa
T = temperature in K
R = gasconstant= 8.3145 J/mol.K
Simply put, the air in a freezer cabinet at minus 20°C is about 20% more dense than warm kitchen air at 30°C and the air in a fridge at 5°C is about 10% more dense than warm kitchen air at 30°C
Better for Food
Because it is not exposed to variations in temperature, or attack from moist kitchen air, food stored in an Adande will last longer, cook more consistently and will look, smell and taste better.
Regular door fridges tend to promote “off” odours as moisture is deposited on the surface of ingredients each time the door is opened. All life requires water and the microbes that produce unpleasant smells and ruin food are no exception. With Adande the cold air does not fall out so the moisture cannot come in to feed the microbes. That’s why food lasts longer and stays fresher in an Adande.
Food quality and safety are dependent on the maintenance of stable temperatures throughout the cold chain. From the farm to the plate, in the past the weakest link has often been in commercial kitchen fridges & freezers. Adande's patented design ensures that cold air is retained on opening and therefore temperatures are kept at the ideal level.
Low Velocity Cooling Minimises Dehydration
In conventional equipment fans are needed to 'throw' the cold air around the cabinet to attempt to eliminate hot spots where stored food gets block the airflow. Adande drawers can be completely full, leaving no apparent air gaps, and they will still function perfectly with cold air falling evenly all around the food.
Perfect for Any Food
Adande technology allows chefs to optimise the storage temperature for all types of food, in a range from 15°C to minus 22°C.
The ability to hold each food type at its specific, ideal temperature further improves its quality & shelf life. Once cooked, food that has been stored correctly holds its colour much better, thereby enhancing the visual appeal of the dish.

The replacement of cold air with warm, damp kitchen air in conventional units leads to ice crystals forming and freezer burn in freezers. It leads to condensation in chillers. Bacteria thrive on the oxygen and water leading to spoiling of food and potential health risks.
Frozen product and cooking oil must be at the required temperature for best results - chips with freezer burn spit fat from the fryer. Any food that is not deep frozen will contaminate the oil.
