Hrishikesh Desai, then head chef at the Brasserie restaurant at Lucknam Park Hotel in Wiltshire, was the winner of the 2010 National Chef of the Year competition.

“It’s great news that Adande is sponsoring National Chef of the Year and giving competitors use of their two-drawer units.

“In the previous competitions, there was only 1 freezer for the competitors to share. The doors were always open – we needed ice to refresh vegetables, to cool pastry – and the temperature was never maintained. I remember one competitor whose sorbet did not set because of this! Adande sponsoring the competition is a real boon for the competitors – I wish I could have had one.

“I first came across this new technology at Lucknam Park. I like the idea of having the flexibility of fridge or freezer and working at any temperature you want. The blast chill is also a must have for every chef and I like the idea that it gives you feedback; what time did the product go in/come out etc.

“The Adande also gives a lot of work area – I would definitely want one if I were to open my own restaurant.”

National Chef of the Year is run by the Craft Guild of Chefs and is one of the most prestigious culinary challenges in the industry today.

Past winners include Gordon Ramsay, Eyck Zimmer, Mark Sargeant and Simon Hulstone.

Hrishikesh won a live cook-off at the Restaurant Show at London’s Earls Court.

Working with a mystery basket of ingredients, he beat nine other finalists to claim the title.
